A Quiche By Any Other Name is Not the Same!

Introduction

I originally "discovered" crustless quiche [fritatta to some] in a murder mystery series that included recipes used by one of the characters. Don't worry, she was the good guy! Try various fillings but stick with Gruyere cheese, the flavor is the best. The reason I make it as a whole pie is that the presentation is beautiful and gives the impression of abundance. Beware- you'll be hard pressed not to eat more than 1/6 of the pie! Ingredients

    PREHEAT OVEN 375
    8-9" GLASS PIE DISH

    6 LARGE EGGS
    1/4 C. SKIM MILK
    2 STRIPS COOKED/DRAINED/CRUMBLED BACON
    2 C. GRUYERE CHEESE,SHREDDED INTO PIE DISH
    1/8 TSP. GRATED NUTMEG
    1 TSP. HERBS DE PROVENCE
    2 SCALLIONS, SLICED

Directions

IN A 375
-ROAST BACON ON RACK WITH PAN UNDERNEATH TO CATCH GREASE UNTIL CRISP. RESERVE ON PAPER TOWEL.
-PUT SHREDDED CHEESE IN GLASS PIE DISH [METAL PIE TINS NOT RECOMMENDED!]
-MIX EGGS AND MILK IN MEDIUM BOWL. POUR OVER CHEESE SO THAT IT IS EVENLY DISTRIBUTED.
SPRINKLE HERBS AND NUTMEG OVER ENTIRE PIE.
-CRUMBLE BACON AND A BIT MORE CHEESE OVER TOP AND BAKE AT 375 UNTIL GOLDEN AND PUFFY.*
- LET COOL A BIT BEFORE CUTTING INTO SIX PIECES. [DEFLATION WILL OCCUR!] SERVE EACH WITH A SPRINKLE OF SLICED SCALLIONS AND A SIDE OF FRESH FRUIT**
