Crumb Cake

Introduction

This is a healthier version of the original, but still decadent! This is a healthier version of the original, but still decadent!
Number of Servings: 16

Ingredients

    1 cup granulated sugar
    2 cups spelt flour
    1 cup wheat germ
    1 tsp cinnamon
    1 tsp cloves
    ½ tsp nutmeg
    ¼ tsp salt
    3/4 cup shortening (margarine used)
    2 tsps baking soda
    2 cups 2% milk
    1 cup chopped raisins
    1 cup almonds (optional)

Directions

Grease and flour a 9x13-inch pan.
In a large bowl combine sugar, flour, wheat germ, spices, and salt. Work in shortening as though for pie dough until the mixture resembles coarse crumbs. Remove and reserve 1 cup of crumbs for topping.
Add baking soda to milk and stir into remaining mixture. Add raisins (and nuts) while there are still a few dry lumps and continue stirring only until all is moistened.
Pour batter into pan, sprinkle with reserved crumbs, and bake in a 350º F oven until top is browned and a toothpick comes out clean, about 50 minutes
Makes 16 good-sized pieces.
