Shortbread - Quick and Easy

Introduction

A shortbread recipe I tried out and instead of the 1/2 teaspoon of vanilla extract I used almond extract. A shortbread recipe I tried out and instead of the 1/2 teaspoon of vanilla extract I used almond extract.
Number of Servings: 14

Ingredients

    2 cups flour
    1/4 teaspoon baking powder
    1/4 teaspoon salt
    1/2 cup confectioner's sugar (powdered sugar)
    1 cup butter (soft not melted)
    1/2 teaspoon vanilla extract
    1/2 teaspoon almond extract
    3 tablespoons sugar

Directions

Combine dry ingredients stirring completely and then mix in the wet ingredients until it is pretty smooth, press into a glass pan - or a loaf pan and bake on 350 for about 35 minutes or until lightly golden on the sides. Serve with fresh or frozen fruits and makes an excellent quick snack, still less calories than a candy bar, even if you eat more than 1/14 of it. You do not have to use the sugar at all, but it isn't really hurting the calorie count so you can either mix it in or sprinkle it on top.
