Claudia's pumpkin soup

Number of Servings: 6

Ingredients

    2 cups mashed pumpkin or winter squash
    9 cups no fat low sodium chicken stock
    1 cup onions, diced
    1 tsp olive oil
    black pepper

Directions

Saute onions in oil until clear. Combine all ingreditents in crock pot and cook on HIGH for 4 hours.

Makes 6 - almost 2 cup servings.
