Ingredients

    3-4 large ripe bananas (nutritional info based on three), mashed
    1/4 c. raw sugar
    1 large egg, beaten
    1/3 c. coconut milk
    1 tsp vanilla extract
    1 tsp baking soda
    dash of salt
    1 tsp ground cinnamon
    1/2 tsp ground nutmeg
    90 grams (3/4c) whole wheat flour
    90 grams (3/4c) all purpose flour
    60 grams almonds, chopped

Directions

Preheat oven to 350F
Mix coconut milk and bananas.
Add sugar, egg, and vanilla.
Add the dry next.
Pour into a buttered loaf pan and bake for about 50 minutes or until done.
Cool on a rack.
Remove from pan and slice and serve.

Serving Size: makes one loaf pan
