Fishy Green Pasta

Introduction

This is great when Asparagus & Spinach are in season and you can get a hold of any kind of fish that will let you cut it into 1 inch chunks. This is great when Asparagus & Spinach are in season and you can get a hold of any kind of fish that will let you cut it into 1 inch chunks.
Number of Servings: 4

Ingredients

    2 bundles of fresh asparagus, chopped into 1/3
    5 oz of fresh spinach chopped small
    12 oz of Swordfish, cubed
    2 red tomatoes cut
    6 cloves of garlic
    about a 1/2 box of pasta of your choice (6 oz)-cooked
    red pepper flakes
    1 tbsp of olive oil
    1/4 cup Crumbled goat cheese

Directions

Steam the fish by putting about a 1/4 cup of water in a hot pan and adding the fish. Cover it and add water as needed. Stir occasionally to be sure fish is not sticking. Once fish is cook through, pull out of pan.

Add oil and garlic to pan, cook 2 mins. Then add Asparagus and 1/4 water, more as needed. Steam Asparagus the same way you did the fish, but try to be sure most of the water is gone before proceeding. Once it is tender add pepper flakes, and stir. Add fish, and cook for 2 mins. Then add tomatoes, stir and cook 1 min. Put spinach on top and cook only until spinach begins to wrinkle, a lot.

Mix Pasta and the mixture in the pan in a large serving bowl. Add Goat cheese and stir. Makes healthy serving for 4.

Sprinkle with another TBSP of Cheese when serving (not added to calculator) optional
