Introduction

I modified a couple of recipes for my taste. Make these ahead of time and freeze individuall for a quick breakfast I modified a couple of recipes for my taste. Make these ahead of time and freeze individuall for a quick breakfast
Number of Servings: 14

Ingredients

    1/2 Cup of white flour
    1/2 Cup of whole wheat flour
    3/4 teaspoon Baking powder
    1 teaspoon salt
    6 Eggs
    2 cups soy milk
    2 cups cheddar cheese
    1/2 cup onion diced
    1/2 cup broccoli diced
    1 cup fresh spinach
    6 Brown and serve lite sausage lings
    6 ounces turkey hame

Directions

In a saute pan, cook sausage according to package directions
In a seperate pan, saute onion, and broccoli until softened. Add spinach until cooked down

Mix together flour, salt and baking powder--set aside

Whisk together Eggs and milk
Sprinkle and stir flour mixture into the egg mixture
when cobined add the veggies and meats.
Use a 1/2 cup measuring cup to scoop egg mixture into muffin tins
Bake in the oven at 375 until done in the middle
20-30 minutes.

Serving Size: makes 14 muffin size portions
