Introduction

This is a quick chili recipe with tomatillo and tomato sauce. I created this dish when I had a leftover baked chicken breast. This is a quick chili recipe with tomatillo and tomato sauce. I created this dish when I had a leftover baked chicken breast.

Ingredients

    2 tblsp olive oil
    1 cup chopped onion
    2 cloves of garlic
    1 baked chicken breast
    1 15 1/4 oz can of sweet corn
    1 15 oz can of S&W Chili Beans
    1 14.5 oz can of stewed tomatoes
    1 15 oz can of tomatillo sauce
    1 tblsp of chil powder
    1 tsp salt

Directions

Heat olive oil over medium heat until warm, add onions. Cook the onions until they are transluscent. Crush the garlic into the onion mixture, cook for 30 seconds longer. Add tomatillo sauce, tomatoes, corn and baked chicken breast. Stir. Add chili powder and salt to taste. Cook until chicken is broken up.

Serving Size: 8 - 1 cup servings
