Number of Servings: 8

Ingredients

    * *Bok Choy, raw-shreaded, 3 cup
    * Cabbage, napa, 1 cup
    * Peppers, sweet, red, raw, sliced, 1 cup
    * Carrots, raw, .5 cup, grated
    * Cucumber (with peel), 0.5 cup slices
    * *Snow Peas, fresh, 0.5 cup blanched
    1/4 C sliced green onions
    1/4 C unsalted peanuts (this calculation excludes the peanuts)
    Dressing
    * low sodium soy sauce, 2 tbsp
    * Brown Sugar, 1 tbsp packed
    * Rice Vinegar, 1 tbsp
    * 2 TBSP Lime Juice
    * Sesame Oil, 2 1tsp
    * Olive Oil, 1 tbsp

Directions

Put it all together and toss!
