Ingredients

    1 can (12.5) oz. chunk chicken breast in water, drained
    1 can (15.5) oz. cannellini (white kidney) beans, drained and rinsed well
    1 can (14.5) oz. fire roasted diced tomatoes, with juice
    1 package (16 oz.) sugar snap stir fry
    Jerk seasonong, to taste
    Chopped fresh cilantro, to taste
    1/2 cup of lime juice (adjust to taste)
    Splash of lemon juice

Directions

* Stir together the chicken, beans, tomatoes and sugar snap stir fry in a crock pot set on high.
* Chop the leaves of fresh cilantro to taste (I used about 12 stems) and sprinkle over the mixture.
* Pour 1/3 cup of lime juice (use more or less to taste) over the ingredients.
* Cover and cook on high approximately 4 hours or until frozen vegetables are tender and flavors have melded.
* Top with sour cream and jerk seasoning to taste.

Serves 4.
