Simple Roast Chicken

Number of Servings: 8

Ingredients

    1 whole chicken, approx 3 lbs
    1 tsp salt
    1/2 tsp pepper
    pinch cayenne
    4 med size red potatoes, sliced 1/4 in slices
    1 tsp dried thyme

Directions

Preheat the oven to 450F. Rinse the chicken, then dry it very well with paper towels, inside and out.

Mix salt, pepper, cayenne and paprika. Use some on the inside of the bird. Truss and sprinkle the outside with the seasoning mixture.

Lay potato slices in as close to a single layer as you can and sprinkle with the seasoning as well as the thyme.

Lay the bird on top of the potatoes in the center.

Roast uncovered until done, 50-60 minutes. Remove from oven when done and baste, let rest 15 minutes before carving.
