IntroductionMy family and I absolutely LOVE this salad. In the summer time we keep gallons of it in the fridge for a quick snack or even a side to a meal. My family and I absolutely LOVE this salad. In the summer time we keep gallons of it in the fridge for a quick snack or even a side to a meal.
4 large cucumbers
4 medium onions (I use red they are sweeter)
16 cups apple cider vinegar
8 cups water
1/4 cup Sweet N Low (40 packets)
1 tbsp dill weed
Slice onions in quarters strips, (or as preferred).
Add 16 cups of apple cider vinegar to pot, along with 8 cups water. Begin bringing to boil, stir in 1 tbsp dill and 1/4 cup Sweet N Low, (or your choice of sweetener).
Bring vinegar mix to almost boil.
Add vinegar mix to veggies, stir around veggies to make sure all veggies get surrounded by vinegar... refrigerate.
Allow to sit for at least 12 hours before serving.
**Vinegar mix may be used up to 2 times again as long as it remains refrigerated in between.
***Note: if using red onions, vinegar mix will turn a pinkish color from onion color, this is normal.
Makes 2 gallons or 32 1 cup servings.
