Lemon Chicken

Introduction

Chicken with a little zing to it. Chicken with a little zing to it.

Ingredients

    • 4 boneless, skinless chicken breasts
    • 2 teaspoons dried basil leaves
    • 2 tablespoons chopped fresh parsley
    • 2 tablespoons lemon juice
    • 2 teaspoons olive oil
    • 1/2 teaspoon salt
    • 1 garlic clove, finely chopped

Directions

1. Remove fat from chicken.

2. Make lemon sauce: Beat remaining ingredients in a medium-sized bowl with a whisk or fork.

3. Spray a 10-inch skillet with cooking spray and cook chicken over medium-high heat for about 15 minutes or until juices are no longer pink when thickest part of chicken is cut.

4. Spoon some lemon sauce over chicken, turn chicken over and cook for an additional 15-20 seconds. Serve chicken topped with remainder of sauce.

Serves 4.

    Really have used this recipe for different occasions and even at church gatherings and every one wants the recipe my mom dont like chicken but when I make this dish she likes it I love chicken myself thank you for a great dish - 6/17/08

  • Excellent! I did add more lemon juice and used fresh basil from my garden and dried paraley (reversed what was called for), but it came out great! Since it is just hbby and I I froze the extra two servings for another night. - 7/11/11

  • As a person still learning to cook boneless chicken breasts, this recipe is a great help! Very pretty, too. I wanted a more lemony flavor, though and perhaps a different way of cooking to keep breasts tender (but may be my lack of experience?) - 6/12/11

  • This is a great recipe. I added a few more spices like thyme, pepper, and Italian seasoning. Then I broiled the chicken in a cast iron skillet. It was delicious! I chopped up the leftover chicken to put in a salad tomorrow. This was yummy. - 1/2/11

  • It was pretty good! Next time I think I may rub the chicken breasts with this the day before I cook, to let the taste sink all the way through then brush with lemon juice while cooking. We also used the Foreman and it worked like a charm! - 1/24/10
