IntroductionThese baked beans are great...tasty, vegetarian, and healthy! These baked beans are great...tasty, vegetarian, and healthy!
2 tsps dried coriander
2 tsps cumin
2 tsps curry powder
5 x cloves of garlic
120 gms mushrooms
165 gms of carrot
300 gms of Watties Super Greens (peas, brocolli, spinach)
2 tsps rice bran oil (or whatever oil you have)
1 x 420gm tin of chopped tomatoes
2. Add chopped tomatoes, cover and cook for 5 min (stirring so it doesn't stick).
3. Add veges, and 1 tsp curry, cumin, and coriander and simmer for 2 mins
4. Add baked beans, cover and simmer for 15 mins (or until carrots are cooked).
Serve with rice or on it's own.
