Giant Zucchini Pancake

Introduction

Super healthy & filling! Try topping with shredded cheese,black beans, corn, sour cream, salsa......the ideas are endless! Part of a high protein, vegetarian meal. Super healthy & filling! Try topping with shredded cheese,black beans, corn, sour cream, salsa......the ideas are endless! Part of a high protein, vegetarian meal.
Number of Servings: 1

Ingredients

    2 large egg whites
    1/4 cup part skim ricotta cheese (I like Sprouts, fresh)
    1 small zucchini, shredded & moisture squeezed (about 100g)
    1/4 cup plain bread crumbs
    garlic powder
    black pepper
    salt
    Italian seasoning

Directions

Mix all the ingredients together.
Spray a 10" non-stick skillet with vegetable spray and heat over medium to medium high heat. Spread zucchini mixture in pan, flattening out to fill the pan.
Let mixture cook undisturbed till browned. Cut in half with spatula & flip both sides over. Turn heat down to medium and cook until browned & set.
Enjoy with any toppings you like.
