turkey tostada for one

Ingredients

    4oz lean ground turkey
    1 whole wheat tortilla
    1tsp olive oil
    .5 C lettuce
    .5 C chopped cucumber
    3 tbsp salsa
    2 tbsp plain greek yogurt
    1/4 tsp cumin
    dash of cayenne papper

Directions

Sauté 4 oz ground turkey breast in 1 tsp olive oil with 1/4 tsp ground cumin, a dash of cayenne pepper. Spray 1 whole-grain tortilla (8 inches) with cooking spray; bake at 350° until crispy, 5 to 10 minutes. Top tortilla with turkey, 1/2 cup chopped lettuce, 1/4 cup diced cucumber, 3 tbsp salsa, 2 tbsp nonfat plain yogurt.
