3/4 cups wheat bulgur
3/4 cups quinoa
4 cups hot water
2 tblsp salt
2 bunches of parsley
3 roma tomatoes diced
2 to 3 tbsp fresh mint leaves chopped
1 large cucumber diced
3 green onions chopped
1 tsp garlic
zest of 1 lemon
juice of 3 lemons (3/4 to 1 cup)
8 tblspns extra virgin olive oil
Meanwhile, chop the parlsey, green onion, garlic and mint. Dice the tomatoes, and cucumber. Place all in another large bowl. Zest one of your lemons and squeeze all three into the bowl. Add the olive oil.
When the water is absorbed by the bulgur, add the bulgur to your veggies. Mix and serve. This is best chilled for an hour or so. However, I make this and eat on it for up to 5 days with no problems! Enjoy!
