Chicken Veggies and Dumplings

Introduction

I loved Chicken and Dumplings as a child. My mother always made it with PLENTY of Vegetables. I don't care for the cream of soups, however you can add it to your version if your family cares for it. Number of Servings: 6

Ingredients

    1 pound boneless skinless chicken breast(we buy frozen)
    2 Celery Stalks, chopped
    2 Carrot Sticks, chopped
    1.5 cups chopped green peppers(1large or 2 medium)
    1 medium onion, chopped
    4 chicken bouillon cubes
    2 cups Jiffy or other biscuit mix
    2/3 cups milk(or other mix instructions)
    water added till covered

Directions

Put chicken and all veggies in a slow cooker(or stove top pan) add water till all are covered. Add 4 chicken bouillon cubes(can also replace water and bouillon with chicken broth) cook on low for 8 or 9 hours.

Set slow cooker to high, make biscuit mix per instructions and spoon over top. Allow to cook for an additional 25 or 30 minutes.

You can cut the first 8-9 hours of cooking by heating on high, time on high is only 2-3 hours.

Potatoes can also be added as can any vegetable. We often add peas and corn.
