1 Angel Food Cake - (Store bought, 10" diameter)
1 8-oz Nufchatel Cheese
1-8-oz Marscepone Cheese
4- Large Organic Egg Yolks
1-tsp Vanilla Extract
16 oz Decaf Coffee (fresh brewed)
1/4 Cup Stevia
1/8 Cup Sugar
1/2 Cup Unsweetened Cocoa Powder
1.5 Servings (24 chips) Ghirardelli milk chocolate chips
Soak cake evenly with decaf coffee (reserve 2 tsp of coffee)
In processor, blender or using bowl/mixer, add egg yolks, both cheese items, stevia, sugar, vanilla extract and 2 tsp of reserved coffee.
Mix until smooth & creamy (maybe a minute or two)
Pour/scoop over cake using spatula to cover cake completely.
Use sifter to dust Cocoa Powder
Add chocolate chips
Cover with saran wrap and refrigerate for at least 2 hours
Serve with light whipped cream if desired (calories are not calculated for the whipped cream)
