Cheesy Frittata

Introduction

Ingredients

    1 tbs light butter
    1/2 cup sliced onion
    1/2 cup sliced bell pepper
    1/2 cup sliced zucchini
    1/2 medium tomato diced
    1 pinch of basil
    1/2 cup egg beaters
    1/2 cup 1% cottage cheese
    1/4 cup 1% milk
    1/2 cup shredded monterey jack cheese

Directions

Coat an oven proof 10" skillet with cooking spray and place over medium heat until hot. Melt butter in pan. Add onions, peppers, and zucchini. Cook until lightly browned. Add tomatoes and basil. Cook another 2-3 minutes. Preheat broiler. In a blender, combine egg beaters, cottage cheese, and milk. Blend until smooth. Pour into pan. Cook, covered, until set but top is still moist. Put under broiler until the top is set. Sprinkle cheese over top, broil until melted.
Makes 2 servings.
