Simple Pasta Salad

Introduction

Elbow (or any type of macaroni or pasta) with peas and pine nuts, and light Greek salad dressing. Add any spices or herbs you want. Elbow (or any type of macaroni or pasta) with peas and pine nuts, and light Greek salad dressing. Add any spices or herbs you want.
Number of Servings: 8

Ingredients

    macaroni or pasta
    pine nuts
    peas
    light salad dressing, oil/vinegar based, not creamy

Directions

Boil pasta according to package directions. Drain.
Boil or steam frozen peas to desired doneness (I like mine a little firm). Drain.
When pasta and peas cool a little, mix together in a bowl. Add pine nuts, salt and pepper to taste, and you could also add whatever other seasonings you like (Italian blend, etc.). I like oregano.
Pour in 2 Tbsp. light salad dressing of your choice (I like Greek style) and mix well.
You could also add diced red onion, sliced black olives, sliced or whole grape/cherry tomatoes, or add crumbled low-fat or fat-free feta cheese for variety.
