Wheat breaded Pork Chops

Ingredients

    6 thick cut bone-in pork chops
    1 Tablespoon olive oil
    2 slices whole wheat or other whole grain bread
    2 Tablespoons (6 teaspoons) sugar free Apricot jam or preserves
    Salt and pepper to taste

Directions

Preheat oven to 425 degrees.
Spray a jelly roll pan or other rimmed baking pan with non-stick spray.
Break the bread into big pieces and then process them in a food processor for a couple of pulses. Drizzle in the olive oil slowly and pulse until the breadcrumbs are just moist.
Place the chops on a clean working surface. Season the pork chops on both sides with salt and pepper.
Spread one side of each chop with 1 teaspoon of apricot jam.
Spoon the breadcrumbs on generously and pat down to incorporate the crumbs into the jam.
Move the chops, breaded side up onto the baking sheet.
Cook for 15-20 minutes or until the meat registers 150 degrees internal temperature. The center should be opaque and the breading should be lightly browned.
