1 tbsp Olive Oil
2 cloves Garlic, chopped
1 med Onion, chopped
1 cup Celery, chopped
1/2 med Red Sweet Pepper
1/2 med Orange Sweet Pepper
2 cups Mushrooms, sliced
1 can Hunts Tomato Sauce (I use Hunts because it does not have a lot of sugar added)
1 box (16 oz) Whole Wheat Rotini
Basil to taste
Oregano to taste
Crushed Chillies to taste (optional)
4 oz Low Fat Mozzarella Cheese, shredded
Preheat a large, deep frying pan with oil. Gently saute garlic, onion and celery until softened. Add remaining vegetables and saute another few minutes, then add tomato sauce and spices. Heat and let simmer to allow flavours to blend. Sauce should be done about when pasta is done.
Drain pasta and put in large bowl. Add sauce and cheese, then mix and serve! Cheese will melt as other ingredients are hot. Ooey, gooey good!!!
