Cranberry Almond Chicken

Number of Servings: 4

Ingredients

    1 lb chicken breasts, boneless/skinless
    2 shallots, coarsely chopped
    1 leek, thinly sliced white and light green part only
    1/3 cup maple syrup
    1/3 cup cider vinegar
    1/4 tsp nutmeg
    2 Tbs soft margarine
    1/2 cup dried cranberries, no sugar added
    1/3 cup slivered almonds
    1/3 cup panko bread crumbs
    1/4 tsp pepper

Directions

Preheat oven to 450.
Spray baking pan with cooking spray and add chicken. Bake for 20 minutes.
While baking, add leek, shallots, vinegar, syrup and nutmeg to small saucepan. Bring to boil then reduce heat to med low. Cook for about 10 minutes or until liquid is reduced by about half.
Combine margarine, cranberries, almonds, panko and pepper into a crumbly mixture.
Remove chicken from oven and pour leek mixture over it and then put on topping. Return to oven and bake for an additional 10 minutes.

Serving Size: 4 servings of 1/2 lb. chicken breast
