Smoked Mozzarella Meatballs

Ingredients

    ยค 12oz lean ground beef
    ยค 1 32oz can crushed tomatoes
    ยค 1 Tbsp olive oil
    ยค 1/2 lbs smoked mozzarella cut into 1/2 inch cubes
    ยค1/2 cup chopped fresh parsley, plus more for garnish
    ยค 1 slice bread torn into tiny pieces and soaked in milk
    ยค 2 eggs
    ยค 1 onion, chopped
    ยค 4 cloves garlic, minced
    ยค Salt and pepper
    ยค Polenta

FYI - Calories displayed do not include Polenta and smoked mozzarella - I could not find them in the ingredient adder. Because of this, I'm listing the calories here also as they should be when all ingredients are included.

1. Mix the beef with the bread, eggs, 1/2 cup parsley, half the onion and garlic, and a generous sprinkling of salt and pepper. Without overworking the meat, form meatballs - any size is fine.

2. Hold each meatball int he palm of one hand and use the thumb of your other hand to make an indentation in the meatball. Drop in a cheeze cube, and then carefully fold themeat back over the cover.

3. heat the oil in a large skillet or pot over medium heat and sear each meatball until brown all over. Remove to a plate. Pur off all but a little fat and add the remaining onion and garlic; saute until light brown. Return the meatballs to the pan, add the tomatoes, and cook over low heat for 20 minutes to 1 hour.

4. Season the suace with salt and pepper. Serve the meatballs over soft polenta cooked according to the package directions, and garnish with parsley.

Should make 4 servings.
