These may be the best cookies I've ever made - crispy with a buttery coconut flavor. This recipe uses only half a cup of butter and is loaded with rolled oats for fiber. Secret ingredient? Number of Servings: 36

Ingredients

    1/2 cup butter
    1 egg
    1/2 cup white sugar
    1/2 cup brown sugar
    1/2 tsp vanilla
    1/2 tsp baking powder
    1/2 tsp baking soda
    3/4 cup flourjavascript:void(0);
    1 cup rolled oats
    1 cup Rice Krispies
    1/2 cup coconut

Directions

Preheat oven to 350

Blend butter, sugar, egg and vanilla in a large bowl.

In another bowl, combine remaining ingredients. Mix well and add to butter mixture.

Place walnut sized spoonfuls onto an ungreased cookie sheet.

Bake 10-12 minutes until golden brown

Store in airtight container. Freeze beautifully.

Serving Size: Makes 3 dozen cookies
