Chicken Caesar Salad

Introduction

Number of Servings: 4

Ingredients

    1 head of romaine lettuce
    3 chicken breasts, cut into 1 inch cubes
    1 tablespoon minced garlic
    1/2 cup garlicky croutons (I use PC Garlic & Butter Sourdough Croutons)
    1 ounce parmesan cheese grated
    4 tablespoons caesar light dressing
    1 tsp canola oil
    Sea salt to taste
    Pepper to taste

Directions

Heat oil in nonstick pan over medium heat. Add garlic, cook 1 minute, add chicken. Stir frequently. Season with Salt and pepper to taste. I usually skip it.
While chicken is cooking, wash and chop lettuce, toss in dressing. Toss in croutons. Stir in Parmesan.
Divide salad equally onto four plates. Top with cooked chicken.
