Ham and Broccoli Crustless Quiche

Introduction

Flourless quiche, adapted from a few different recipes, but heavily influenced by the basic quiche recipe from Frugal Gourmet. All gluten ingredients have been removed. Number of Servings: 8

Ingredients

    Butter, salted, 1 stick
    Egg, fresh, 10 jumbo
    Baking Powder, 1 tsp
    Salt, .25 tsp
    Cottage Cheese, 1% Milkfat, 8 oz
    Jack or Cheddar Cheese, 5 oz
    Ham, regular (11% fat), 2 cup, diced
    Broccoli, frozen, 1 package (10 oz)
    Onions, raw, .3 cup, chopped

Directions

Melt the butter, dice the ham and broccoli. Whip eggs until fluffy, add baking powder, salt, cottage cheese, half the Jack or Cheddar cheese (we like sharp white cheddar), melted butter, ham, onions and broccoli.
Pour mixture into 9X13 greased baking dish. Top with the remaining Jack or Cheddar. Bake at 400 for 15 minutes, then reduce to 350 for 35-40 minutes or until top is browned to taste, and knife inserted comes out clean.
Let cool for 10-15 minutes, and serve warm.
