Introduction

This is an adaptation of Nigella's banana bread recipe. We didn't have raisins so omitted the bourbon as well. This is an adaptation of Nigella's banana bread recipe. We didn't have raisins so omitted the bourbon as well.
Number of Servings: 12

Ingredients

    1 c + 2 Tbsp flour
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 stick butter, melted
    1/2 c sugar
    2 large eggs
    4 small ripe bananas, mashed
    1/4 c chopped walnuts
    1 tsp vanilla

Directions

Preheat oven to 325 & grease 9x5" loaf pan.
Mix dry ingredients. Mix melted butter & sugar, then add eggs, one at a time. Add mashed banana & stir well, then add vanilla. Gradually mix in dry ingredients.
Pour into pan, bake in oven 60-75 minutes. Cool, then slice.

Serving Size: Makes 12 slices
