Berry crumb bars

Submitted by: LCANGELOSI

Introduction

These can be made with any kind of fresh or frozen berries. Raspberries, blueberries or blackberries work best. I used blackberries to figure the nutritional value. Ingredients

    Crust:
    1.5 cups flour
    1/2 cup sugar
    1/4 tsp. salt
    1/2 cup butter, cut
    1 tsp. vanilla
    Topping:
    2 T sugar
    2 T flour
    2 cups berries
    Filling:
    5 T butter
    1/2 cup brown sugar
    3/4 cup flour

Directions

Preheat oven to 400. Lightly butter a 13x9" baking dish.

Crust: Combine flour, sugar and salt in food processor. With motor running, add the butter, egg and vanilla. If mixture seems dry add cold water. Turn dough into prepared pan and press into even layer.

Filling: Stir together the sugar and flour until blended. Add the berries; stir to coat. Spread over crust layer.

Topping: Work butter and sugar together until blended. Gradually add flour until mixture resembles coarse crumbs. Sprinkle over berries.

Bake 15 minutes. Reduce oven temperature to 350 and bake for 25-30 more minutes. Cool on wire rack before cutting into bars.
