Banana Nut Applesauce and Raisin Muffins

Introduction

These are yummy and filling! A great full sized breakfast muffin for under 200 calories that both you and the kids will love. Does not need butter!!! These are yummy and filling! A great full sized breakfast muffin for under 200 calories that both you and the kids will love. Does not need butter!!!
Number of Servings: 8

Ingredients

    1 very medium ripe banana, mashed
    1/2 cup lite applesauce (a child's lunch box portion works)
    1 fresh egg
    1/4 cup chopped walnuts (or you could use pecans)
    1/4 cup raisins (I use golden)
    1/2 cup Splenda brown sugar blend
    1 cup self-rising flour

Directions

preheat oven to 350* F
line muffin tins with parchment paper squares or cupcake liners

1. Mash banana with applesauce and egg.
2. Stir in nuts, raisins and brown sugar blend.
3. Stir in flour by approximate 1/4 cup increments.
4. Spoon into 8 muffin cups
5. Bake 20 minutes
6. Remove from oven and allow to cool 5 minutes before serving.
7. Enjoy! Great with ice cold milk, hot tea, or your favorite coffee!
