Breakfast Pumpkin Muffins

Number of Servings: 1

Ingredients

    1 1/2 c. almond flour
    3/4 c. canned pumpkin
    3 eggs
    1 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. cinnamon
    1 1/2 tsp. pumpkin pie spice
    1/8 tsp. salt
    1/4 c. honey
    2 tsp. almond butter
    5 whole almonds (or some sliced almonds)
    2/3 c. dried cranberries

Directions

1. Grease 6 muffin tins.

2. Mix all ingredients. Pour into tins.

3. Bake at 350 degrees for 25 minutes on the middle rack.

4. Sprinke with crushed almonds and cranberries on top when they come out hot.
