oRIGINALLY MADE WITH TAPIOCA FLOUR, i RESORTED TO WHAT I HAD IN THE PANTRY; SPELT FLOUR AND RICE FLOUR. THE INGREDIENTS LIST SAYS "WHOLE GRAIN FLOUR" BECAUSE THAT'S AS CLOSE AS I COULD GET. Ingredients

    1 C. TAPIOCA FLOUR OR THE COMBINATION OF 1/2 C RICE FLOUR AND 1/2 C. SPELT FLOUR
    1 TSP. BAKING POWDER
    2 LARGE EGG YOLKS
    2 C. ANY EASY MELT CHEESE
    WATER AS NEEDED

Directions

350 USE SILPAT OR LIGHTLY SPRAY COOKIE SHEET

MIX FLOUR(S) AND BAKING POWDER IN MEDIUM BOWL.
MAKE WELL IN DRY INGREDIENTS FOR EGG YOLKS. ADD SHREDDED CHEESE. IF DOUGH IS TOO DRY, MAKE A WELL AND ADD WATER AS NEEDED. DIVIDE DOUGH INTO 10 SMALL OVALS AND BAKE UNTIL GOLDED. NICE WITH A SPICE VEGETABLE SOUP!
