Number of Servings: 4

Ingredients

    16 oz chicken
    6 corn tortilla 6 inch
    1 red bell pepper, roasted, diced
    1 T cilantro, fresh
    1 1/2 cup enchilada sauce
    2 T Chunky style salsa
    1/2 cup yellow onions, diced fine
    1 cup corn
    1 T cumin seed, ground
    1 t fennel seed
    4 oz pepper jack cheese

Directions

preheat oven, layer ingredients cook at 375 degrees. We use a 9 x 9 square and cut it in four.
