Introduction

Slaw of spring veggies: Kohlrabi, carrot, radishes, spring onion. Also has edamame for fun and protein and apple for sweetness. Slaw of spring veggies: Kohlrabi, carrot, radishes, spring onion. Also has edamame for fun and protein and apple for sweetness.
Number of Servings: 6

Ingredients

    2 Kohlrabi (chop the greens, too, for more nutrition and very few extra calories)
    1 medium Carrot
    1 small Apple
    1 cup of Radishes
    1 Spring onion (2 tbsp chopped)

    For dressing:
    2 tbsp veganaise
    1 tbsp Dijon mustard
    1/4 cup White wine vinegar
    1 tbsp Lemon juice
    1 tsp Sugar
    Salt and pepper to taste

Directions

Cook edamame, rinse, and let cool. Chop greens and green onion in food processor. Move to bowl, Grate kohlrabi, carrots, radishes, apple. Add to bowl, along with edamame.. Whisk remaining ingredients to make dressing. Mix dressing into vegetables thoroughly.
