Grilled Tuna in a Sundried Tomato and Spinach Cream Sauce

Ingredients

    8 oz Fresh Yellowfin Tuna Steak
    1/2 Cup Blue Crab Meat
    1/2 Cup Brown Rice
    1 Cup Fresh Spinach
    1/4 Cup of Sun Dries Tomatos
    1/4 Cup Cupped Kalamata Olives
    1 1/2 Cups Fat Free Half and Half
    1 TBSP Low Fat Cream Cheese
    1 TBSP Olive Oil
    2 Cloves of Garlic Finly Chopped
    Pinch of Old Bay
    Black Pepper to taste (Optional)

Directions

Start Charcoal
Start Brown rice (Follow Directions on bag)
Heat Olive Oil in Pan
Chop garlic, scallions, olives and Sun Dried Tomatos medium course add to pan
Saute' until garlic and scallions are tender
Add Spinach and Crab Meat until Spinach is wilted
Add Half and Half, Cream Cheese Cook until Cream Cheese has melted
Add Old Bay and Pepper
Charcoal griiled Tuna to Meduim Rare about 2 minutes per side

On Plate Place 1/2 cup of cooked Brown Rice, lay Tuna on top cover with half of Sauce.
Enjoy!
