Mango Quinoa Salad

Introduction

Number of Servings: 6

Ingredients

    Quinoa 1 cup, cooked per package instructions
    1 fresh red pepper, cut into bite size pieces
    1 cup black beans, rinsed
    1 fresh mango, peeled and cut up
    3 tbls cilantro, chopped
    1 green onion, sliced
    1 jalapeno, seeded and chopped
    2 tbls olive oil
    1 tsp cumin
    juice of one lime
    salt and pepper to taste

Directions

Prepare quinoa as directed. Make dressing with olive oil, cumin, and juice of one lime and whisk. Place all ingredients in bowl and toss until coated with dressing. Serve. Great to make and take left overs to work.
