Warm courgette salad

Introduction

this is part of the summer dinner my mum was used to cook for us after a long day on the beach....very easy and fast. this is part of the summer dinner my mum was used to cook for us after a long day on the beach....very easy and fast.
Number of Servings: 2

Ingredients

    250 gr of courgette
    1 tbsp of evoo
    1 clove of garlic
    1 tbsp of vinegar or balsamic vinegar
    oil to fry

Directions

Heat up the sunflower oil in a frying pan on medium heat. Cut the courgette in slice not too thin. Fry the slice in batches for few min or until golden. Set them in a plate with kitchen paper to absorb the extra oil.
When all the slices are cooked and well drained plate them and add evoo, salt to taste and the vinegar. Serve warm or cold.

Serving Size: 1 tbsp makes 1 serving
