2 servings (6 slices) Jones Canadian Bacon, diced
1.5 cups Ore Ida frozen hashbrowns
1 medium green bell pepper, chopped
1 cup chopped raw onion
1 cup Egg Beaters
1/4 cup Reduced Fat shredded cheddar cheese
Add canadian bacon and hashbrowns and stir until warm - about 3 minutes
Add chopped pepper and chopped onion to skillet
Stirring often, cook until veggies have softened and hash browns begin to brown and crisp - about 6 minutes
Transfer contents of skillet to a large bowl and set aside.
Remove skillet from heat, respray, and heat over medium heat.
Add Egg Beaters and scramble until just cooked - about 3-4 minutes.
Return hasbrown mix to skillet and stir gently to mix.
Reduce heat and sprinkle with cheese.
Cover and cook until cheese melts - about 2 minutes.
