Hoppin John Salad

Introduction

Black-eyed peas can be used instead of Pinto Beano
1 celery stalk sliced thin (approx 1/2 cup) can be added
Green Onions can be used instead of raw onions
Cook time is if you are using uncooked beans

Number of Servings: 10

Ingredients

    Pinto Beans 1 cup dry or 1 15 oz can
    Brown Rice 1/2 uncooked
    Tomato
    Onions 1/2 cup chopped
    2 Tablespoon fresh Parsley
    1 Tablespoon Olive Oil
    1/4 lemon juice
    1 or 2 cloves of garlic

Directions

Combine following ingredients in mixing bowl
2 cups cooked beans or 1 15 oz can of beams
1 1/2 cup cooked brown rice
1/2 cup finley chopped onions
1 tomato diced
2 Tablespoons of fresh parsley

Mix together
1/4 cup lemon Juice
1 Tablespoon Olive Oil
1-2 cloves garlic--crushed

Pour over salad . Toss gently

Chill for 1 to 2 hours

Serving Size: makes 10 1/2 cup servings
