Katy's Vegetarian Chili

Introduction

I like food that is flavorful, quick and easy. Here's my version of vegetarian chili using Morningstar's sausage patties (hot). I like food that is flavorful, quick and easy. Here's my version of vegetarian chili using Morningstar's sausage patties (hot).
Number of Servings: 12

Ingredients

    1/4 cup olive oil
    1 medium spanish onion, diced
    1 medium green bell pepper, diced
    2 packages Morningstar Sausage Patties (Hot)
    1 - 28 oz can Bush's Chili Beans
    1 - 15.8 oz can Great Northern Beans
    1 - 28 oz can diced tomatoes
    4 tbsp chili powder
    cumin and cilantro to taste
    salt and pepper to taste

Directions

In the olive oil, soften the onion and diced bell pepper. Dice the vegetarian sausages into half-inch pieces and heat with the onion and peppers. Once the sausage is warmed and the onion is soft, add all the other ingredients, stir well, cover and heat for additional 15 minutes over medium low heat, stirring every 5 minutes to prevent sticking.

Serving Size: Makes 12 - 1 cup servings.
