Pasta with Green Sauce

Introduction

The classic way to make this recipe is by dumping in a whole 6 oz container of full-fat cream cheese! I've made it a little healthier by replacing it with lowfat milk and a little light cream cheese. Ingredients

    8 oz chicken breast
    10 oz spinach, frozen, finely chopped
    2 cups zucchini
    2 tbsp light cream cheese
    1/2 cup 1% milk
    2 tbsp pesto sauce
    2 cups whole wheat spaghetti, cooked

Directions

Dice the chicken breast into 1" cubes.
Mix with one tbsp of pesto and let stand while you dice the zucchini in similar cubes, and thaw the frozen spinach.
In a non-stick pan, cook the chicken until lightly browned. The pesto should be oily enough to not need any additional oil while cooking.
Add the zucchini and cook for 3-5 minutes, or until zucchini is tender crisp.
Add in the thawed spinach and cook, stirring constantly, until it is heated through.
Add milk, cream cheese and other tbsp of pesto.
Stir well until cheese has melted and the spinach and these added ingredients have combined into a light green sauce.
Serve over hot cooked whole wheat pasta. Serves two.
