Chicken Teryiaki Stir-Fry

Ingredients

    * Chicken Breast, no skin, 1 breast, bone and skin removed (remove)
    * *Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2" (remove)
    * Onions, raw, 1 slice, large (1/4" thick) (remove)
    * Mushrooms, fresh, 2 cup, pieces or slices (remove)
    * Broccoli, fresh, 1.5 cup, chopped (remove)
    * *Asian Gourmet Baby Corn (6 peices), 2 serving (remove)
    * Waterchestnuts (water chestnuts), 1 cup slices (remove)
    * **teryaki sauce, la choy, 6 tbsp (remove)
    * *Olive Oil, Kirkland, Extra Virgin Olive Oil, 1 tbsp (remove)
    * brown rice (1 cup cooked), 4 serving (remove)

Directions

1) Slice veggies and chicken to prep for cooking. Also, prepare rice according to package. Brown rice will take about 30-40 min.

2) Heat olive oil in skillet, and add chicken. Cook until no longer pink and remove from skillet.

3) Add veggies to skillet and cook for a short time to keep crunchy, or longer to soften. Add chicken back into skillet along with sauce. Warm in skillet until rice is done, then serve.

Serving Size: 4 1-cup servings of rice, 4 servings of stir-fry
