Pesto Potato salad

Number of Servings: 6

Ingredients

    2 tbsp basil pesto
    1 cup yellow corn
    1 cup diced red peppers
    4 tablespoons diced green onion
    2 potatoes, diced and boiled until soft
    1 cup snowpeas, blanched for 3 minutes, cut into bite sized pieces

Directions

Dice and boil potatoes for 15 minutes or until tender. Blanch snow peas for 3 minutes. Immerse both in cold water to stop cooking. Add potatoes, diced peas, corn, diced peppers, and diced green onion to bowl. Mix with 2 tablespoons of pesto. Chill and serve.
