Ingredients

1 pound fresh green beans, cut short and cooked or 2 (10oz) packages of frozen cut green beans, cooked or 2 cans green beans, drained (reserve liquid)
6 slices bacon
2 medium onions, chopped
4 tsp cornstarch
1 tsp salt
1/2 tsp dry yellow mustard
2 tbsp brown sugar
2 tbsp white vinegar
add salt to taste if using fresh or frozen green beans
Directions
Drain beans and reserve 1 cup water from the cooked fresh or frozen beans (if using canned, reserve 1/2 cup); set aside. Fry bacon until crisp and drain on a paper towel; drain most of the fat. sauté onion in the bacon fat until golden. In a small bowl, mix cornstarch, salt, mustard, brown sugar and vinegar. Add reserved liquid from the beans and beat until smooth. Add this mixture to the bacon fat in the pan and boil until thickened slightly. Add beans and stir well. Place the beans in a serving dish and top with crumbled bacon .
