Spinach Rice Frittata

Ingredients

    2 tbsp butter
    1 medium onion chopped
    1 red pepper chopped
    1 clove garlic, crushed
    3 cups of cooked rice
    1/2 cup parmesan cheese
    4 eggs, slightly beaten
    1/2 cup milk
    1 tsp salt
    1/4 tsp pepper
    300 grams of mozzarella cheese, shredded.

Directions

Saute onion and red pepper in 1 tbsp butter. Add spinach, garlic, rice and parmesan cheee. Mix well. Combine eggs, milk and seasonings. Stir into rice mixture. Turn unto buttered oven safe skillet or 2 quart casserole dish. Top with mozzarella chees. Bake at 340 degrees fro 30 minutes.
