Introduction

I had a bunch of leftover vegetables, turkey and gravy from a family dinner left over. Needed to find a way to use them up, so I made this throw together casserole. The gravy makes it a little higher in calories than I like, but it's a great way to use up some leftovers in the fridge, and a fairly easy and quick dinner I had a bunch of leftover vegetables, turkey and gravy from a family dinner left over. Number of Servings: 2

Ingredients

    1 CupTurkey Meat (I used breast) cut up into bite sized pieces
    6 baby carrots
    12 fresh green beans
    6 asparagus spears
    2 small (baby size) potatoes
    1/2 cup turkey gravy--could use chicken broth instead

Directions

I microwaved all the vegetables until al dente to speed up the cooking process, throw everything together in a small baking dish. Dot with 1/2 cup of gravy and bake until vegetables soften and everything is heated through.

Serving Size: Makes 2 servings about 1 1/2 cups
