Best Refried Beans Ever

Introduction

These have a spectacular flavor. You can use 3 cans of refried beans but fresh cooked beans taste better. I like using 1 or 2 dried chipotle peppers instead of the cayenne (cook them with the beans). Number of Servings: 12

Ingredients

    2 cups: Pinto or Black Beans
    6 cups: Water
    2: Bay Leaves
    1 Tbls: Cumin, ground
    1 tsp: Coriander, ground
    1/2 tsp: Cayenne
    1/2 tsp: Black Pepper
    1/2 tsp: oregano, dried
    1/2 tsp: Basil, dried
    1/2 tsp: Dill Weed, dried
    1 3/4 tsp: Salt
    1 Tbls: Light Vegetable Oil
    2 Tbls: Butter, unsalted tastes best
    1: Onion, chopped
    1: Green Pepper, chopped
    4 cloves: Garlic

Directions

1. Put beans, water, and bay leaves (and dried pepper(s), if you're using) in a medium-size pot. Bring to a boil, then reduce heat and simmer for about 2 hours, or until the beans are soft.

2. While beans are cooking. Measure out the spices and salt and mix them together so they are ready to use. Heat oil and butter in a large frying pan and add onion, green pepper, and garlic and saute about 3-4 minutes. Reduce heat, add spice mixture and saute for 2 minutes more, stirring frequently to avoid burning. Remove from heat.

3. When beans are done, remove bay leaves (and tough skins if you used dried peppers) and dump everything into a food processor and puree.

4. Pour the pureed beans into the pan with the sauteed vegetables. Cook over a low heat until it reaches the consistency you like. The thicker it gets, the closer you watch to avoid burning. I stop when the heated beans act like a mud volcano.

5. Cool and eat.

6. These freeze extremely well.
