IntroductionThese have a spectacular flavor. You can use 3 cans of refried beans but fresh cooked beans taste better. I like using 1 or 2 dried chipotle peppers instead of the cayenne (cook them with the beans). These have a spectacular flavor. You can use 3 cans of refried beans but fresh cooked beans taste better. 2 cups: Pinto or Black Beans
6 cups: Water
2: Bay Leaves
1 Tbls: Cumin, ground
1 tsp: Coriander, ground
1/2 tsp: Cayenne
1/2 tsp: Black Pepper
1/2 tsp: oregano, dried
1/2 tsp: Basil, dried
1/2 tsp: Dill Weed, dried
1 3/4 tsp: Salt
1 Tbls: Light Vegetable Oil
2 Tbls: Butter, unsalted tastes best
1: Onion, chopped
1: Green Pepper, chopped
4 cloves: Garlic
2. While beans are cooking. Measure out the spices and salt and mix them together so they are ready to use. Heat oil and butter in a large frying pan and add onion, green pepper, and garlic and saute about 3-4 minutes. Reduce heat, add spice mixture and saute for 2 minutes more, stirring frequently to avoid burning. Remove from heat.
3. When beans are done, remove bay leaves (and tough skins if you used dried peppers) and dump everything into a food processor and puree.
4. Pour the pureed beans into the pan with the sauteed vegetables. Cook over a low heat until it reaches the consistency you like. The thicker it gets, the closer you watch to avoid burning. I stop when the heated beans act like a mud volcano.
5. Cool and eat.
6. These freeze extremely well.
