Introduction

Ingredients

    Ingredients:
    Brown Sugar, 0.25 cup, packed
    *Dole Pineapple Chunks in 100% Pineapple juice No Sugar Added, 0.5 cup
    Egg, fresh, 1 large
    Buttermilk, lowfat, .25 cup
    Melted Butter, salted, 3 tbsp
    *Flour, white, .5 cup
    Granulated Sugar, .15 cup
    Baking Powder, .5 tsp
    Baking Soda, .15 tsp
    Salt, 1 dash
    Vanilla flavoring, dash

    0.15 = 1/8

Directions

I used a 6 serving muffin pan.
Butter the pan with additional melted butter
Place three pineapple chunks in each muffin cup
In a bowl lightly whisk the egg, then add all the ingrediants into the bowl and beat until smooth ( i did this by hand and spent no more than a couple of minutes whisking)
Divide the mixture over the pineapple chucks evenly.
Cook 20-25 mins at 350F degrees or until a inserted pick comes out clean.
Cool the cakes for 15 mins,
Loosen each cake around the edges with a knife, then tip the muffin pan onto a plate/serving dish.
