IntroductionPerfect for a quick breakfast or pre-workout snack. Perfect for a quick breakfast or pre-workout snack.
1 1/2 cup Oat Bran
1/2 cup Mashed Banana
1/4 cup Splenda Sweetener
1/4 cup Unsweetened Apple Sauce
1/4 cup Unsalted Almonds, sliced
1 tbsp Baking Powder
2 Egg Whites
1 1/4 cup Nonfat Milk
Mix together dry ingredients and wet ingredients separately, then using a hand blender add the dry to the wet.
Allow mixture to set for at least 15 minutes. Freeze baking sheets prior to addition of mixture for optimum results.
Spray inside of baking tray or inside of paper cups with cooking spray to avoid sticking. Bake for 15-17 minutes.
Makes approximately 12-14 muffins depending on size.
